Chocolate peanut butter Pinterest fail

I saw chocolate covered peanut butter rice crispy treats on Pinterest. Turns out I didn't save the Pinterest instructions, so earlier in the week, I made a super simple version (sans chocolate) and thought I would wing it when I made the whole batch...

Let me start by saying I have never successfully covered a food item in melted chocolate. I have covered my fingers, my clothing, the stove, the counter...you get the idea.

Here's what I did:
(Remember I never measure when I'm winging it- so these are estimates)

In a large pyrex bowl melt 1 stick of butter in the microwave
Then stir in about 1/3 cup of peanut butter & 3/4 cup of powdered sugar & a dash of salt. Because I put salt in all my sweets.

Stir in half a box of rice crispy type cereal. (We like Trader Jose's brand)

Then melt a package of chocolate chips, adding in about 2 tbs of butter & a few tbs of cream, milk, or half & half.

I tried to cover the first 2 treats & gave up. I dumped all the melted chocolate into the rice crispy mixture, stirred it all up & scooped it out onto wax paper & put it in the fridge to cool & harden. Much easier, and just as tasty. In fact next time, I will skip getting my hands messy & just spread it into a tray to be cut apart like regular rice crispy treats.

I designed this shawl for a dear friend who attended the birth of my youngest son.  I wanted something really nice for a thank you gift, but with a newborn and a 4 year old in the house, it had to be quick to knit up.  It has 3 options for the edge- eyelets, picots, or bobbles.  It can be worn as a scarf or a shawlette.
One Size Fits All
Materials:
2 skeins novelty bulky weight yarn (roughly 200 yards- shawl can be made as long or short as you wish)
size 13 needles- straight or circular
tapestry needle
Gauge:  not critical
Instructions:
Eyelet Version:
Cast on 2 sts
Row 1: KFB, Knit to end
Row 2: Sl 1, Knit to end
Row 3: K1, YO, K2tog, Knit to end (the first time the K2tog is the last stitch)
Row 4: Sl 1, Knit to end
Continue until the end of the first skein of yarn, or half your desired length, ending with row 4, then:
Row 1: K2tog, Knit to end
Row 2: Sl 1, Knit to end
Row 3: K1, YO, K2tog, Knit to end
Row 4: Sl 1, Knit to end
Continue until you have 2 sts left on the needle, and bind off.

 
Picot Version:
Cast on 2 sts
Row 1: KFB, Knit to end
Row 2: Sl 1, Knit to end
Row 3: Cast on 2, Bind off 2, Knit to end
Row 4: Sl 1, Knit to end
Continue until the end of the first skein of yarn, or half your desired length, ending with row 4, then:
Row 1: K2tog, Knit to end
Row 2: Sl 1, Knit to end
Row 3: Cast on 2, Bind off 2, Knit to end
Row 4: Sl 1, Knit to end
 
Continue until you have 2 sts left on the needle, and bind off.
 
Bobble Version:
Cast on 2 sts
Row 1: KFB, Knit to end
Row 2: Sl 1, Knit to end
Row 3: Make bobble (knit into the stitch without sliding it off the needle, YO, knit into the st again, YO, knit into the stitch 1 last time, turn your work and purl 5 sts**, turn again and K2tog, slide to the left needle, pass the remaining 3 sts over that stitch, slide the stitch back to the right needle.), Knit to end
Row 4: Sl 1, Knit to end
Continue until the end of the first skein of yarn, or half your desired length, ending with row 4, then:
Row 1: K2tog, Knit to end
Row 2: Sl 1, Knit to end
Row 3: Make bobble, Knit to end
Row 4: Sl 1, Knit to end
 
Continue until you have 2 sts left on the needle, and bind off.
**If you know how to knit backwards, you can do that instead of turning the work each time.

Pumpkin Pie Green Smoothie

I have a green smoothie for breakfast every day (& sometimes lunch too). I used to make enough for my son, but then he went through a major anti-smoothie phase. Then yesterday I thought "I need to do something with the leftover pumpkin from the cupcakes I made." I came up with this recipe for pumpkin pie smoothies, and made enough for the hubby, only to find the 5 year old gulping it down when I turned my back.

Here's what you need:
1/2 cup coconut milk (plain, unsweetened)
1/2 a banana
1/2 cup kale (I buy it bagged at trader joe's and store it in the freezer.)
1/4 cup pumpkin (you can find this in the baking needs aisle- make sure you get 100% pumpkin & not pie filling. We're making health food here!)
1 tsp pumpkin pie spice
A generous shake of REAL cinnamon (I buy it in bulk at the health food store. The stuff you get at the grocery store is actually cassia. Yummy, but real cinnamon is even yummier & has all sorts of great health benefits, and aiding in weight loss is one of them!)
A handful of ice cubes
1 scoop vanilla whey protein powder (I use designer whey- it's only $11.99 at trader joe's)

Blend it all together & enjoy!


My other 2 go to smoothies are strawberry banana & piña colada. I never measure very accurately, and almost always have to add more liquid to get everything blended, and end up with a HUGE serving, but some friends have been asking for the recipes, so here goes:

Strawberry Banana-
1/2 cup coconut milk
1/2 cup plain kefir
About 5 frozen strawberries
1 banana
About 1 cup kale
Generous shake of REAL cinnamon
1 tbs flax seed meal (I need to add this to the pumpkin smoothie next time!)
1 scoop vanilla whey protein powder

Fun facts:
The browner the banana, the more cancer-preventing properties it has (and your smoothie will be sweeter!)

The kefir is added for the probiotics, so important for overall health, and along with the flax seed, great for keeping you regular.

And I already told you about the cinnamon. I've lost 20 lbs since I plateaued after my initial quick post-pregnancy weight loss, so I'd say it's working. (My Zumba addiction doesn't hurt either)

Piña Colada-
1 cup coconut milk
1 cup kale
1/2 cup frozen pineapple
1 scoop vanilla whey protein powder

Blend & enjoy! It's like a cross between a piña colada & a vanilla milkshake. Mmmm!

Super Yummy Potato Salad!

So I've had these fingerling potatoes sitting here, and I had no idea what to make with them. I bought them because my 5 year old sniffed the bag, so his germs were on it. (then it turned out that bag was moldy, and they had an employee run back & get me a new bag!)

I was inspired by the delicious potato salads we've been getting at the Lansdowne farmers market from the Lansdowne Table. They usually use fingerling potatoes, so I thought "why not?"

Here's what you need:
1 lb fingerling potatoes
3 tbs mayonnaise
1 tbs lemon juice
Sea salt
Pepper
Garlic powder
Chives
Dill
(measurements are approximate. I do not measure unless I'm baking- I was generous with the garlic & dill, just a few shakes of everything else)

Boil the potatoes until they are fork tender. (I like them soft, so I boiled them about 5 minutes, if you like them firm, I wouldn't cook them as long.)
Let potatoes cool & cut them into quarters.

To save cleaning, I only used one bowl- so mix the mayo, lemon juice, & seasonings in the bottom of a large bowl, dump the potatoes on top & mix well. Enjoy!

The hardest part about having your rainbow baby

This is something I think about a lot: if Ellie was here, Leo wouldn't be.  Sometimes I feel like loving Leo so much means I don't love Ellie enough.  Sometimes I feel like missing Ellie so much means I don't love Leo enough. It's like mommy guilt squared.

I've heard a family member repeatedly remark that she miscarried a baby because her next child was destined to do great things.  Even though it's not directed at me, it feels like a slap in the face...like Leo was somehow more worthy to get a chance at life than Ellie was.  I think how the next baby's life works out is how God brings good out of even the worst circumstance, and not that He took the previous baby out of the equation in order for the next baby to enter the world.  I would never pretend to know why God allows what happens to happen, but I'd like to think He didn't deem my precious Eliana less important than her brothers & decide that the world didn't need her contributions. She is certainly equally loved and important to our family. 

I remember a dear friend sharing the story of the miscarriage she had a month before she conceived her son. She said she knew she wouldn't have had her precious boy if this baby had survived, but that didn't make her feel any better.  That is exactly how I feel.  I love Ellie every bit as much as Moose & Leo.  Leo fills our lives with so much joy, but he doesn't negate the pain of Eliana's loss.  Knowing that I wouldn't have him if Ellie was still here doesn't make me feel better, it makes me feel guilty.  I feel like explaining her loss away like that dishonors her memory.  There will always be a hole in my heart for Ellie. God has blessed me with a beautiful baby boy, not to replace her or one-up her. He is his own blessing and I am working to get the Ellie vs Leo guilt out of my head.

I wonder if other baby loss moms struggle with these thoughts?
